The plant is harvested at maturity in July-August. It is then distilled in its entirety with flowers and stems. Rainwater is converted into steam and cooled down to separate PDO fine lavender floral water and PDO fine lavender essential oil at the end of the distillation process.
The designation PDO fine lavender applies only to essential oils.
Fine lavender is the original lavender plant, reproducing by seed. It can also be found in the wild on the highest plateaux of Sault. Each farm produces its fine lavender in a different way, which is a characteristic of fine lavender. In a field of fine lavender, you will find thousands of different flowers.
Other lavenders are always cloned, so they are genetically identical no matter which farm grows them.
The characteristic smell of our Sarraud PDO fine lavender has a fresh note. Its fragrance is noble, refined and deep. The smell of fine lavender is less intense compared to lavandin or clonal lavenders.

It is a shrub about fifty centimetres high and wide, with long, thin leaves and a single flower spike per stem. The spike of fine lavender is small. The spike of fine lavender is small. . The yield of essential oil is lower than with lavandin but its properties are more interesting and more numerous.
Fine lavender provides an essential oil of great quality, and is the only one to benefit from the PDO “Lavender of Haute-Provence” label. Its fragrance is very delicate, floral and subtle. 150 kg of flowers are necessary to produce 1 litre of essential oil.
